Founded in 2009 by Marc and Emer Hynes, Java the Hut Coffee, started selling coffee at Farmers Markets and Food Shows. After great success we won the tender with Irish Rail to set up coffee shop at Balbriggan Train Station where we currently retail from Monday to Friday 6am to 2pm. Our two Java the Hut mobile coffee units can also be seen at local festivals and events throughout the country.
Building strong links with coffee growers and suppliers along with a passion for coffee tasting and roasting, in 2018, Java the Hut opened a Micro Roastery. Based in Balbriggan, North County Dublin and the first in North Fingal, our coffee is craft-roasted in small batches ensuring freshness and allows us to maintain the highest quality standards.
We specialise in microlot small batch Single Origin Estate coffees and source only high-grade green beans from international farms and growers associated with Rainforest Alliance, Direct Trade and Fair-trade Organics and Lady Co-ops Green coffee.
Guatemala is known for its dazzling topography which makes up the Sierra Madre Mountain range that runs through the country, part of the Pacific Ring of Fire. The producers that grow Volcanes are small-scale coffee growers, located on the slopes of the volcanoes and nearby areas. These soils are known as “Andosols” and are excellent for plant root development, water retention, and resistance to drought. These producers over time have managed to take advantage of the volcanic material found in the soil to produce high quality coffee and nutritious vegetables, creating a balance that benefits their family economy and provides additional sources of income. This coffee has a balanced acidity and a full body.

La Estrella comes from the department of Nueva Segovia, situated 225km from Nicaragua’s capital, Managua. This is a region very close to the border with Honduras and is part of the Cordillera de Dipilito Nature Reserve, a place with a rich biodiversity of flora and fauna. The name La Estrella comes from the Beneficio La Estrella, the coffee mill founded in 2013 by Caravela Nicaragua. It is located in the municipality of Ocotal. For La Estrella, the coffee comes from producers in different municipalities. Coffee from La Estrella has subtle acidity with notes of hazelnut and dark chocolate. Harvest December-April.

They mainly grow Caturra, Catuai, Pache and Costa Rica. The farmers have their small individual beneficios where they depulp, ferment, wash and dry the coffee themselves. All producers are receiving significant premiums for quality. They take part in a coffee quality and training program and the cooperative is committed to reforestation as part of their sustainability concept.

Blackcurrant and Blueberry undertones, candylike sweetness and rum. Amazing florals, intensely winey acidty.
Our Decaf is Brazilian Swiss Water, specifically decaffeinated with no chemicals. This is a well know method which allows the caffeine to be removed while the coffee is still in its green state. Retaining its flavour we roast this coffee medium to dark which produces a nice crema with a chocolate caramel finish.

Marc and Emer Hynes’s smart Java the Hut Coffee trucks have been a familiar sight at Farmers’ Markets and Food Shows since 2009, and they also have a spot at Balbriggan Train Station where they lift the spirits of weekday travellers with their range of delicious brews and – thanks to the fact that they operate a micro-roastery nearby – sell packs of freshly-roasted coffee to take home.
Good coffee roasters tell you on the tin what you can expect when you sip from the cup. So, when you grind up some @javathehut_coffee_roasters Spezial, organic microlot beans sourced from the Democratic Republic of the Congo, roaster Marc Hynes tells you to expect that the coffee will be ‘tangy with grapefruit, apple, lemon and melon.’
